A refreshing salad with fresh tomatoes, rich mozzarella, and savory roasted bell peppers. A true delight for your senses.

It is a perfect salad that can turn into a meal by itself. Or better yet, bring it to your next get-together. Easy to assemble and even easier to enjoy. No cooking is needed, which, to me, is a bonus.

I also had some leftover roasted bell peppers from last week that I placed under olive oil and decided to put them together with mozzarella and tomatoes.

Ingredients needed to create this exquisite salad

Tomoates

Mozzarella

Roasted Bell Pepper

Olive oil

Fresh thyme

Salt and pepper

Slivers of red onion shaved

Cooking tips and step-by-step instructions on how to prepare this salad

This recipe will come together in a flash. If you do not have roast red peppers, you can purchase or make them yourself.

If you choose to roast red peppers at home, here are a few instructions to do so:

  • Preheat the broiler.
  • Place red and yellow fresh peppers on a baking sheet, put them under the broiler, and turn as they roast so it is even on all sides.
  • Once done, place the roasted peppers in a small bowl, seal them tight with foil, and let them steam for 10-15 minutes. Remove from the bowl and pull off the skin.
  • The best way to remove the skin that will not come off is to use the back of a knife. Remove the seeds, ribs, and stems from the peppers.

As you can see, it is super easy to do.

Proceed with the other ingredients:

  • Slice the tomatoes and slice the mozzarella about the same thickness.
  • Shave the red onion if you are using one.

Assembling the salad:

  • Layer the fresh tomato on a plate with a small rim and top it with the sliced mozzarella.
  • Top the mozzarella with roasted red bell pepper.
  • Sprinkle the fresh thyme. Season with salt and pepper and add all over the olive oil.

Here, you can add the shaved onion if you wish.

Suggestions

I didn’t want your usual Caprese salad, so I used fresh thyme and lots of cracked pepper.

Due to the richness and savory taste of the roasted bell peppers, I decided to forgo the balsamic vinegar.

Red pepper is roasted here, however the yellow pepper is also delicious with this salad.

Shaved red onions add a touch of tanginess to this tomato caprese salad. Just one tiny sliver keeps a well-rounded balance.

It was the perfect snack that made up a great, fun dinner.

  • 1 large mozzarella
  • 2 large tomatoes
  • red bell pepper, roasated red bell pepper
  • fresh thyme
  • olive oil

OPTIONAL

  • ½ red onion, thinly sliced

Instructions

  • Slice the mozzarella and tomatoes. Arrange one slice of tomato, 1 slice of mozzarella. Top it with roasted bell peppers.
  • Salt and freshly ground cracked black pepper. Olive oil and fresh thyme.
