Sun-dried tomatoes packed in olive oil – the star of this dish, ensure that they are bright red.

Pulse the ingredients (excluding olive oil) in a food processor until chopped.
Pour olive oil while blending until you reach the desired consistency.
Serve immediately or store in the refrigerator until ready to serve.

Ingredients
- 1 cup sun-dried tomatoes olive oil
- 3 anchovies
- 1 tablespoon capers, drained
- 5 tablespoons olive oil
- 1 garlic, minced

Instructions

A friend of mine gifted me with a huge jar of sun-dried tomatoes that she makes herself from tomatoes from her garden. It’s such a fantastic gift and I don’t want to waste even one to make something that’s not delicious.
