Cresson, Garbanzo Beans, Dates Salad

Rich in vitamin A, C, E, and K this salad will mesmerize you by how savory it is. The best part is that you can prepare all the ingredients with the exception of the cresson, the day before and you can have a quick last-minute meal ready in no time.

Roasted Beet and Onion Salad

This is a very old and super easy recipe that we enjoy often. I really enjoy sweet onions, and it marries well with the beets here. As you may notice I have not added oil to the recipe. The beets and onions have so many natural juices that there was no need to.

Chickpeas, Cauliflower, Curry Vinaigrette

All my favorite ingredients on a plate. A rich, healthy, and super delicious dish that will work well as a stand-alone salad, or as a side dish to poultry, fish, and meat.

The possibilities are endless. Just have fun and enjoy it.

Are you drooling yet?

Insalata Russa

My grandmother taught me how to make it when I was quite young, and I am so thankful she did. She made it look easy and, of course,  never followed a recipe.

I on the other hand have to measure things. With just potatoes, tuna, giardiniera, and mayonnaise you have a perfect afternoon snack or tapas. Great dinner or lunch.

Lentils, Black Beans, Goat Cheese, and Baby Green Salad

Light, vegetarian, healthy recipe, and so easy to prepare. Another great attribute to this great recipe:  low carb. How great is that?

Low sodium and saturated fat make this dish a very healthy vegetable to enjoy and add to our diet. I love all the flavors and lentils are so perfect hot or cold, and they just make this dish perfect.

Roasted Bell Pepper with Italian Farro Salad

This recipe doubles as a starter to be prepared alongside dishes such as Rock Cod in Ginger Soy Sauce Marinate,  Shrimps Fingers. or Jalapeno Burgers.

The bell peppers roasted, olives and farro leave you wanting more.

Endive with Avocado Salad

I always enjoy Belgian endives and love the fresh, crisp feeling with each bite and so easy to pair with any vinaigrette sauce too.

Avocados on hand, endives, and a couple of ingredients for the vinaigrette, and in less than 20 minutes dinner was served.

Cauliflower with Olives and Cherry Tomatoes

Roasting cauliflower which brings out all the natural juices combined with tomatoes and the light lemon vinaigrette, you could live just with that.

Add some bacon for a fun spin.

Seared scallops or oven-baked salmon, or chicken, and there you have a great meal.

Or add some asparagus or green beans. The possibilities are endless, and I am hopeful this will soon become your favorite salad as well.
