I used Campari as I do love them, and I purchased some extremely fragrant ones at the market this weekend.
However, any small cherry tomatoes will work as well.
Ingredients needed to create your roasted tomatoes
Campari tomatoes – smaller therefore easier to enjoy. If you can add them to the vine, it would make for a great table presentation. Optional, of course. Smaller tomatoes are fun, too; just monitor the baking part.
Olive oil – needed to bake your tomatoes
Salt and fresh black pepper – this is all the seasoning you will need
Fresh thyme – the aroma of the tomatoes with the fresh thyme is the epitome of summer
Sea salt flakes – I like the extra crispiness over them, of course this is an optional step.
Step-by-step instructions on creating this excellent side dish
- Gather the few ingredients you need while the oven preheats to 400 degrees F.
- Gently wash and dry your tomatoes and lightly toss them with the olive oil.
- Spread them on a single layer in a baking sheet and generously season with salt and pepper.
- Roast for 15 to 20 minutes, depending on the size of your tomatoes, or until soft to the touch.
- Transfer them to a serving platter and sprinkle over sea salt flakes.
Pro Tips
Remember to adjust the cooking time when using smaller tomatoes as they will cook faster.
I used thyme, but use any fresh herbs you may have; there is no need for a special trip to the grocery store.

Roasted Tomatoes
Ingredients
- 1 pound campari tomatoes
- 2 tablespoons olive oil
- sea salt
- pepper, a couple of grinds
- 1 teaspoon fresh thyme leaves
- sea salt flakes
Instructions
- Preheat oven to 400 degrees.
- Toss the tomatoes lightly with the olive oil on a baking sheet. Spread them out into one layer and sprinkle generously with the coarse sea salt and the pepper. Roast for 15 to 20 minutes, until the tomatoes are soft.
- Transfer the tomatoes to a serving platter and sprinkle with basil leaves and sea salt. Serve hot.
