Most of all, and this is where I am confident you will love it too, it has only four ingredients!
Do not be frightened by the amount of butter. The butter enhances the rich flavor of the garlic and cooks the potatoes filled with excellent flavor.
It can go from oven to table without hesitation. I look forward to serving this again on Christmas Day.

- Garlic Potatoes
I have been making this dish for years, which has always been welcomed. Even though it uses so much divine butter, once you bite into it, you will forget there is any butter in this dish.
This dish has been a favorite of our friends and their children for many years.
Why you will love this recipe
Only four ingredients – if you want to count, salt and pepper.
The oven does it all – place it in the oven, and you can dedicate your time to your other cooking.
The perfect side dish – It will work beautifully with most meats, fish, pork, and poultry dishes.
What potatoes to use?
The Yukon Gold potato is one of the favorites for roasting. Their skin is thin, so they cook pretty quickly if used unpeeled.
Waxy enough to hold their shape.
If using unpeeled potatoes is not my preference, ensure they are well scrubbed and washed to remove all dirt or any chemicals they may have collected in the dirt.
A quick note about the garlic
As you continue reading on, you will notice that I do leave the garlic unpeeled. I did that for the simple reason that once the garlic cooks and, in this case, roasts, it will overroast and become bitter to the taste and hard to bite.
However, keeping it in its paper-thin shell acts as a protective cover, allowing the garlic to soften while roasting, blending with the butter, and giving your dish a wonderful aroma.
Ingredients needed to create this excellent garlic potato recipe
Potatoes – small and all the same circumference, so they will bake all the same. Idaho or Russet. Choose potatoes with thick brown skin and no sign of green, which means they are not mature yet.
Garlic – the star of this recipe. Leave it unpeeled to release the aroma and not burn, turning it bitter.
Unsalted butter – I always use unsalted butter in my cooking or baking to control the amount of sodium. Salted butter not only adds too much salt to your dish, but it changes the flavor.
Salt and pepper – your seasoning
Equipment Needed
Please follow the link to access the product of your preference.
Mandoline – My tool of choice as it will keep the exact width to all your slices and eliminate the guesswork
Cast iron skillet – the easiest as it will bake them to perfection due to the conductive cast iron
I have two in this size: a larger one and a couple of small ones. They are perfect for so many cooking applications.
Cooking tips and step-by-step instructions on how to prepare this wonderful garlic potato recipe
This is a very straightforward recipe and your oven will do all the work for you.
- Preheat the oven, and while it reaches the desired temperature, peel the potatoes and do the following:
- Clean, peel, and slice your potatoes to 1/8 inch thick. Please keep all the slices together to make arranging them in your skillet easier.
- Melt the unsalted butter and add half to your skillet. Swirl it around to cover the bottom of the cast iron skillet.
- Place all your potato slices in a circular pattern and evenly space them.
- Tuck your garlic cloves among the slices.
- Brush the remaining butter over the potatoes and season generously with salt and pepper.
- Bake in the hot oven for 30 to 40 minutes or until tender and golden brown. Each oven is different. Therefore, keep an eye out so as not to overbake them.
Bring your dish to the table and enjoy.
Storage and Reheating Leftover
If you have any leftovers, store them in the baking skillet, covered with aluminum foil. They store for a couple of days in your refrigerator.
You can also place the potatoes in an air-tight glass container and store in the refrigerator for a couple of days.
I do not recommend freezing potatoes as their consistency will break down.
To reheat, place your skillet in the cold oven, where you will set the temperature to 350F. Cover the potatoes with aluminum foil and dab a few pieces of butter in between the potatoes. Seal and bake for 15 to 20 minutes or until hot.
Frequently Asked Questions
Can you eat potatoes every day?
Amazingly enough, it is acceptable to eat potatoes every day. That said, how you prepare them has a massive impact on your health. Whole potatoes with skin are nutritious vegetables with health benefits. To keep it healthy, stay away from fried, butter-rich mashed.
Is a potato a vegetable or a fruit?
It is a vegetable. Due to its starchiness as a vegetable, it is nutritionally different from other vegetables.
Why is a potato called a spud?
The spud was a sharp, narrow spade used to dig up the large rooted potatoes and plants. Around the 19th century the word changed from the tool you used to dig it up, spade, to the potato you dug up. Wherever English was spoken, the word spud remains in the language today.

Hi Matties, Yes, I do sometimes to remove some of the starch. But you can just dry them with a papertowel if you wish.
